Blending European spring flavors with local ingredients, inspired by the awakening of nature and the vibrant energy of the season
IGNIV Bangkok (1 MICHELIN Star since 2022) is introducing its first seasonal menu of 2025, the "Spring Menu." Symbolizing the start of new beginnings, the menu embraces not only the awakening of plants and flowers in Switzerland but also the vibrant energy of people gathering after cold winter. Enjoy refreshing and light flavors rounded out by creamy elements, available from March 3, 2025, to June 2, 2025.
Inspired by the vibrant spring season in Europe, the menu showcases a bounty of spring vegetables all locally sourced for their primal freshness, including rhubarb, corns, peas, eggplants and asparagus. These are beautifully complemented by Thailand’s abundant ingredients, such as coconut - used from its meat, milk, and coconut flower juice, cascara from northern Thailand, alongside cacao from the North and the East.
"In Switzerland, spring is not only when plants and flowers come to life, but also when people come together. It reminds me of farmer's markets, where communities gather, fresh produce fills the stalls, and the energy of the season returns after winter. For this menu, we bring that spirit to life by reimagining classic European spring vegetables, pairing them with intriguing local ingredients, creating new combinations that push the boundaries of our past Spring creations," said Chef Arne Riehn, Head Chef at IGNIV Bangkok.
The IGNIV Spring Menu perfectly combines subtle nutty flavors and creamy elements, such as macadamia and coconut, with the freshness of ceviche-style preparations and pickled vegetables. The experience includes 19 handcrafted dishes served in a sharing format, starting with snacks like Tartelette—Seabream—Wasabi, where garbanzo beans form the base of the tartelette. The journey continues with starters such as Lettuce—Macadamia and Langoustine—Corn—Espelette Pepper, followed by main courses highlighting Eggplant—Khon Kaen Pepper—Mole and Pea Salad—Pea Croquette—Pea Sauce. Complete the meal with delightful desserts, including Truffle Schnitte—Rhubarb, made with locally sourced chocolate from Chumphon, Coffee—Coconut Flower Juice, and a Soufflé infused with cascara.

The Spring Menu is available daily for dinner from 6:00 PM – 11:00 PM (last order at 8:30 PM) for THB 5,500++ per person from March 3, 2024, to June 2, 2025. A vegan, vegetarian, a la carte, or kids’ menu is also available to cater to guests’ requirements.
